Give your salad a summer zesty boost! The last thing you want to do on a hot summer day is turn on your oven, but that doesn’t mean your salad has to be boring. This easy salad dressing pairs well with salads that are topped with fresh local fruits (peaches & strawberries), while still packing all the flavour! It’s super easy to make and chances are you already have all of the ingredients you need.

Ingredients:

• 1/4 cup freshly squeezed lemon juice
• 1 teaspoon grated lemon zest
• 1/4 cup olive oil
• 2 tablespoons balsamic vinegar
• 2 garlic cloves, minced
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1 teaspoon Dijon mustard

Directions:

In a small bowl whisk together all the ingredients. You can store in a mason jar in the fridge for up to 5 days or mix into your salad right away. For best results, allow salad dressing to cool in the fridge for an hour before serving with your salad.
